Two organic lemons
Two inches of ginger root
Two whole cloves
Sweetener as you like
A pot, a sieve, a funnel, container(s)
Cut the zest off the two lemons taking as little white as possible. If the ginger is not organic, peel it. Cut the ginger into as thin slices as possible, and then cut those slices into thin matchsticks. (In other words, julienne the ginger). Simmer the ginger, lemon zest, and cloves in nine or ten cups of water for 15 minutes to an hour and then let cool. Strain into the container, add the juice of those two zested lemons, sweeten, chill. Can omit the ginger. Makes about half a gallon.
